This cake really is something special; it presents quite beautifully, and the table it sits on becomes surrounded by the gentle, distinctive floral tones of roses and lychees.
The lightest of almond sponge cake is slowly baked and finely sliced to give the Paradise cake it's structure, forming the base, supporting the velvety top layer of cream infused with rose petals and white chocolate, and also separating the middle two layers of gelee - a narrow, fruity stratum of tart raspberry, and a generous layer of fresh, heartening lychee. It is an experience that is like nothing you will have tasted before, and one that will remain with you for weeks after. If ever a cake deserved it's name, it is this one!
