Chocolate Shortbread with Cacao Nibs, Pink Peppercorns and Fleur de Sel

Ingredients:


  • Flour
  • Unsweetened cocoa powder
  • Cacao nibs, crushed with a rolling pin
  • 1/2 tsp pink peppercorns, finely ground
  • 1 tsp fleur de sel (sea salt)
  • 12 tbsp unsalted butter (at room temperature)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
Florence's comments:

The biscuit has a fine, crumbly texture with a light body that gives easily to the bite. Embedded within it are crunchy shards of cocoa nibs - like a chocolate chip cookie, but a hundred times tastier!

It has four main layers of taste: the first is the sweet, buttery base of the shortbread, combined with the smooth undertones of the organic cocoa powder. These sensations are supported by a background of mineral complexity in the form of sea salt. As the biscuit starts to melt in your mouth, the palate picks up the cocoa nibs - smooth and creamy, reminiscent of chocolate but with a tantalising bitterness that balances the butter, salt and sugar perfectly. Finally there's the slightest hint of hand-ground pink peppercorns - known for their aromatic mildness - a perfect way to finish the perfect biscuit!

A taste of paradise.

This cake really is something special; it presents quite beautifully, and the table it sits on becomes surrounded by the gentle, distinctive floral tones of roses and lychees. 

The lightest of almond sponge cake is slowly baked and finely sliced to give the Paradise cake it's structure, forming the base, supporting the velvety top layer of cream infused with rose petals and white chocolate, and also separating the middle two layers of gelee - a narrow, fruity stratum of tart raspberry, and a generous layer of fresh, heartening lychee. It is an experience that is like nothing you will have tasted before, and one that will remain with you for weeks after. If ever a cake deserved it's name, it is this one!

These handmade cream-filled or fruit-flavoured macarons are notoriously difficult to make. Meticulously protected in a delicate box to keep their airy button-like shells and creamy or fruity center as crispy and chewy as just baked.

Choose one flavour/one filling for a box of 10 macarons (one combination), or two flavours/two fillings for 20 macarons (four combinations). You can mix and match the fillings with the batter you like, please state in the order form.
